Hello! You may have heard I’ve written a cookbook. It’s called Let’s Do Lunch and it’s out September 1st. This is a bonus newsletter for all you special subscribers to let you know what you can expect from it.
Lunch is back and it’s here to stay.
So you know that big thing that happened to us a couple of years ago? Many of us found ourselves eating differently, going from Meal Deals at the office, to having to deal with meals at home.
This book came out of a conversation with friends about finding ourselves in a daily ‘what things can I put between two pieces of bread?’ dilemma. Lunch became hard work.
And it shouldn’t be. It should be a pleasurable moment in your day, a break from work and a chance to invigorate yourself with something delicious.
Think wholesome dishes that are quick, accessible and easy to put together. Well here you go! The book is divided into five chapters, with many recipes only taking 10 or 20 minutes.
There’s the Make It Quick chapter, packed with toasts, fritters and sandwiches, such as Melty Spanakopita Pitta Pockets (below).
Then there’s Salad For Days, full of you-know-what dishes such as Salad Nicoise with Tonnato Sauce or the classic Watermelon, Feta & Pickled Onion Salad (below).
Or for when you need a bit of sustenance, Big Bowl Energy includes soup recipes such my autumn go-to Pumpkin Soup with Sage & Chilli Oil and pasta dishes such as Super Greens Pasta with Burrata and Quick Sausage & Cream Pasta (below).
Finally, there’s Take Your Time With It, with all my favourite 30 minute or more recipes such as Sesame Chicken Schnitzel with Kimchi Coleslaw (below) for when you have a little time on your hands. Maybe it’s the weekend and your friends are coming over?
I’ve also included a particularly useful chapter, The Added Extras. It’s full of batch recipes you can get ahead with to jazz up your lunches. The greatest hits of all my dips, crunchy salad sprinkles, easy pickles, and snacks for while you’re working. These include my dead-easy Muhammara recipe, queen of dips Avocado Green Goddess and game-changing Soy Seeds.
